- 85g Quinoa, cooked
- 1/4 cup Parsley, fresh - chopped
- 1 Spring onion, finely chopped
- 1 clove Garlic, finely chopped
- 5 cherry Tomatoes, halved
- 1/4 English cucumber, chopped
- 1/4 Avo, chopped
- 3 Tbs Pumpkin seeds, lightly toasted
- Drizzle olive oil
