This is a great recipe to make extra, and use for left overs. It is a good complementary dish for Moroccan Chicken.

Quinoa, cooked

Parsley, fresh – chopped

Spring onion, finely chopped

Garlic, finely chopped

Tomatoes, halved
1/4
English cucumber, chopped
1/4
Avo, chopped

Tbs
Pumpkin seeds, lightly toasted
Drizzle
olive oil
Instructions
Mix all ingredients together until well blended – season to taste & enjoy.
