Broccoli Fritters
These are a delicious way to serve cruciferous vegetables which are high in Sulforaphanes which are cancer preventing. They freeze really well too, serve them up with a kale pesto and poached egg – nutritious delicious!

  1. Steam the broccoli for 2 minutes, then add to beaten egg. Add Panko & Parmesan and process in a food processor. Blend until just roughly chopped. Form into Tablespoon size balls and press flat. Heat oil in a skillet, drop in balls and cook until both sides are crispy.
