Lentil Stew with Pumpkin Greens

Anpumpkin-lentil-stew excellent & highly nutritious stew which boosts immunity.

2TBS olive oil

1 large onion

1 TBS fresh minced ginger
1 TBS whole cumin seeds
1 tsp ground cinnamon
½ tsp ground coriander
¼ tsp ground cardamom
4 ½ C water
1 ¼ C lentils rinsed
1kg Pumpkin, peeled and cut into small cubes
½ C golden raisins
1 diced apple
½ kg fresh greens (spinach, carrots tops, kale etc)

Heat oil and sauté onion & ginger. Stir in seeds &
spices & 2 ½ cups water. Add the lentils and bring
to a boil.

Cover & reduce heat to a gentle simmer for 30 min.

Add the pumpkin, raisins, apples & remaining water.
Simmer over medium heat for about 10 min till lentils are tender.

Stir in the greens, cook slightly for 2 min.
Serve with brown rice.

You may substitute the pumpkin with butternut or sweet potatoes.

You could also add in 1 C fresh diced tomatoes & cook to release the lycopenes.
